Corporate Chef Whistler - Basalt/Table Nineteen/The Beacon
I can remember going to a Salumeria in Queens when I worked in New York and sampling fantastic cured meats from around the world and I always thought that the only thing missing was a glass of wine and a place to sit. This could have very well been the beginning of what would later turn into Basalt.
When it did come down to conceptualizing Basalt we wanted a melting pot of modern and rustic, the design of the room is modern and sophisticated yet the center piece is a hand cranked slicer that requires no electricity.
The starting point of the menu is a wide selection of Charcurterie and cheeses from both near and far, diners can taste different offerings not unlike having a wine tasting. Our guests can either choose to put together a share platter themselves or leave the selections in the hands of the Chef. The Platters are great to share and they truly are a conversation starter and are best eaten with the hands whilst sipping on a great glass of wine from our extensive list.
